"The pear from your own tree in the garden is the new luxury" - what top chef Andreas Caminada said lately is for us a decade-long philosophy.
Fennel from the own garden, Williams pears from the Chur Rhine valley, mirabelle plums from the neighbor. The good of our nature comes in concentrated clarity into the glass.
"I can only burn an aromatic distillate if the aroma is already in the fruit. I can not do magic, "says Reto Lipp, Distiller of the Year 2015/16.
With wine we are even stricter: we only take grapes from our own vineyards. Carina Lipp-Kunz, winemaker: "I want to feel my signature from A - Z in the wine."
To illustrate this, all her wines carry hand-written thoughts on the lable. Hand work only.
The vines grow on débris of the Maienfelder Falknis mountain. The rocky, schisty and chalky subsoil with a high pH (7.5-8) is best for the growth of the Pinot Noir vine.
