An extremely precise wine - linear, compact, harmonious, subtle and elegant. Mineral, fruity and spicy on the palate. A pronounced but velvety tannin frame and an infinitely powerful and long finale.
Pingus ferments completely naturally. The aroma and taste of the grapes are retained before the wine is malolactically fermented in Barriqes. The barrique barrels come from the Darnajou Cooperage in Burdos, which is known for some of the best barrels in the world.
For the production of Pingus, two different barrels are used. In the first one takes place the malolactic fermentation , in the second the maturation.
There is no need to talk about PETER SISSECK and his PINGUS, there are few who are as fanatical and meticulous as he is. Bio-dynamics is not an advertising attribute for Sisseck, for him it is the only goal-oriented approach. Sisseck does not produce low yield per hectare through extreme selection, it is simply what the 100-year-old vines deliver to him, and new wood, once his trademark, is increasingly banished from his cellar. For him, the expression of the perfect fruit is first and foremost. His wines are getting better and better every year, finer and more subtle. Founded in 1995 by the Danish Peter Sissek, the winery has its vineyards in La Horra, right next to the legendary vineyards of Hermanos Sastre. The first year of his Dominio de Pingus in 1995 brought Sissek fame and honor. On the one hand there was a lot of brilliant reviews from Parker and Co., on the other hand, the ship sank with the cargo for the US market, which additionally narrowed the small supply and made the pingus right from the start to a mythical wine. Since 1999 there is the Flor de Pingus as a second wine, which has increased qualitatively strong after a moderate start over the years. For the Flor de Pingus Sissek has 20 hectares of Tempranillo vines available, most of them in their own possession. The vines are between 25 and 50 years old. Flor de Pingus 2010 has long since emancipated itself from the role of the second wine and has matured into an independent wine of large format. Peter Sissek began his Spanish wine career in 1991 at Hacienda Monasterio, where he still works as a senior oenologist. In addition to Dominio de Pingus, Sissek meets Clos d'Agon on the Costa Brava (D.O. Empordá) and Quinta Sardonia in Sardon de Duero, a stone's throw outside the D.O. Ribera del Duero the important decisions in vineyard and cellar.
