Our producer: Domaine Koji et Jae Hwa

Domaine Koji and Jae Hwa was created in 2012 with the first acquisitions of vines in the commune of Prémeaux-Prissey as well as La Brunelle located on the Domaine in Gevrey-Chambertin. In 2016, Koji and Jae Hwa bought vines in the Marsannay appellation before others from Hautes Côtes de Nuits and Gevrey-Chambertin were added to the plot. Koji and Jae Hwa will plant two new plots at the beginning of 2024 to reach a total area of 6ha on the Domaine.

Since day one, Koji and Jae Hwa have operated their vines organically, which led to them obtaining the “Agriculture Biologique” certificate in 2016. The idea of working with the lunar calendar as well as bringing preparations, herbal teas and other macerations of plants to the vines was under consideration from the organic certification. Since 2018, the Domaine has been using these biodynamic methods to strengthen the plant and allow it to defend itself against climatic hazards and diseases. To avoid the combustion of fuel and the compaction of the soil, it is with a horse and plows that the Domaine works the soil of some of its plots. The Domaine has also equipped itself with jars for the 2021 vintage to try to age the wine without Sulphur.
